February is finally here. I’ve been so excited for this month’s prize that I could hardly wait…

The kind folks at MimicCreme have generously donated 2 containers of their fabulous product.  MimicCreme is a non-dairy cream substitute made from almond and cashew milks.  It is soy-free, gluten-free, and contains no saturated fats (unlike dairy cream).  This unsweetened variety of MimicCreme (it also comes in sweetened and sugar-free sweetened varieties) is perfect for making hot chocolate, ice cream, creamy pasta sauces and soups.  Or use it straight from the carton in your coffee or tea.  Really, the possibilities are endless.  Substitute MimicCreme (1:1 ratio) in any recipe that calls for dairy cream and I think you’ll be surprised at how this measures up.  Every time I’ve ever used it, I’ve never been disappointed.  I LOVE THIS STUFF!!
