Hot Chocolate

Another wet, rainy day!  Emma seems to love the rain, so we went out and bought what I thought were rain boots.  Well, it turns out that they are “cold weather boots.”  Definitely not waterproof, which we found out today after I let her go out in the rain and stomp around in the puddles.  What else is a rainy day good for?!

After changing her into dry pants and socks, we made some hot chocolate.  I’ve never made vegan hot chocolate before and I had to wing it.  It turned out SOOOOO good.  It was even better than real hot chocolate, I think.

Someone is trying to steal the marshmallow right out of my cup (yes, I had to special order these babies– they aren’t easy to find, but they are just as good as regular ones.  The best part is that they are cruelty-free)!

Hot Chocolate

1 1/2 cups non-dairy milk (we used rice milk)

1/2 cup MimicCreme (I LOVE THIS STUFF!!!)

2 TB cocoa powder

2-3 TB granulated sugar, depends on how sweet you want it

1 tsp vanilla

In a small pan, whisk together all ingredients except the vanilla.  Bring to a slow boil, turn off heat and stir in the vanilla.
