Gingerbread Cookies

Emma was invited to a cookie decorating playgroup yesterday. It sounded so fun (even if the cookies/decorations were likely not vegan), but I was pretty sure that she’d end up sleeping through it. Just as I suspected, she napped until 5:15, so we were out of luck.

Since it sounded so fun and like such a Christmasy thing to do, I decided to whip up a batch to let her decorate after nap. I followed the Gingerbread Cookie and Royal Icing recipes from The Joy of Vegan Baking. The cookies turned out great (some a little burned on the bottoms thanks to my oven not being able to keep a constant temperature). One thing that I didn’t have that the recipe called for was molasses. I only had blackstrap and I was pretty sure that using it in the quanity called for by the recipe would make a disgusting cookie, so I ended up doing half blackstrap and half agave nectar. Worked perfectly!

These were so fun to make. I can’t wait to do them again next year!















Good thinking on the agave nectar. That’s one of my go-to ingredients when I’m a bit stuck.
And from the results, looks like Emma had a great time!
