Crispy Cornmeal Crusted Chicken

Not real chicken, but delicious nonetheless. I took about 1 cup of panko breadcrumbs and mixed in about 1/3 cup of fine ground cornmeal. To coat the chicken, dregde it in some all-purpose flour, dunk it in some non-dairy milk, then encrust it with the panko/breadcrumb mixture. I fried mine in a very small amount of canola oil to get a nice crust, then transfered to the oven. These were pretty addictive! We couldn’t stop munching on them.
















I’m really excited to try this out. I saw these “chicken” strips at Trader Joe’s recently and passed them up. Now that I have seen this little creation I need to try it. Since I stopped eating meat back in May, I have missed it only a few times. One thing I miss most is chicken parmesean. I’m thinking that I will try this breaded faux chicken out and top it with some marinara sauce and a little of the soy station cheese blend…
I’ve tried TJ’s chicken strips and tossed them out. They were gross, but maybe they’ve modified their recipe a bit. The strips are also pretty small, not like a patty. Morningstar Farms makes a good chicken-like patty, as does Quorn, but I’m not sure if they are vegan (probably aren’t).
